李建科,博士,博士生导师,二级教授,1992年获得享受国务院政府特殊津贴,bat365在线平台官网原院长,食品营养与安全团队学科带头人,食品工业副产物深度开发与高值化利用重点实验室主任,西北濒危药材资源开发国家工程实验室学术骨干,陕西省食品科学技术学会原理事长,现任名誉理事长,陕西省毒理学会副理事长,中国农业工程学会农产品加工与贮藏工程分会常务理事等。主要研究方向为:食品分子营养学、食品毒理学、食品工业副产物深度开发与高值化利用、膳食营养与健康、功能成分的生物活性与分子机制研究、富硒食品研究与开发等。
研究工作简介
近年来,在国家自然科学基金项目支持下,开展了果蔬多酚类植物化学物对细胞信号通路调控及对肠道菌群健康影响研究,主要包括调节脂质代谢及体内胆固醇平衡、改善胰岛素抵抗及代谢综合征、降低氧化应激及抑制炎症因子、增强泡沫细胞胆固醇流出及抗动脉粥样硬化、诱导癌细胞凋亡等,研究成果为膳食多酚类植物化学物的营养健康功能奠定了一定的理论基础。在陕西省科技创新工程重大科技专项支持下,开展了蚕桑业副产物高效综合利用关键技术研究,开发出蚕蛹蛋白及功能性多肽、蛹油PUFA及α-亚麻酸、甲壳素及壳聚糖等系列高附加值健康产品,研究成果对蚕桑副产物深度开发和高值化利用,延长蚕桑业产业链,提高蚕桑业整体效益,促进循环经济发展具有重要意义。在国家自然科学基金项目、西安市重点科技攻关项目及中央高校成果转化培育项目支持下,系统开展了石榴皮在食品及生物医药领域的基础与应用开发研究,主要包括,石榴皮快速节能干燥技术、功能成分提取纯化关键技术、提取物减肥、降脂、降糖、抗炎、抗氧化、抑制癌细胞增殖、消除脂肪肝、促进胆固醇代谢转化、抗动脉粥样硬化、调节肠道菌群健康等功能作用及细胞分子机制,首创开发了鲜榨石榴原汁工业化产品及其它营养功能化产品,并联合医学机构开展了对慢病人群干预研究,在石榴的营养与功能研究领域发表了数十篇有国际影响力的学术研究论文。研究了五倍子丹宁的组成成分、生物活性及相关产品研发。在科技部国家重点研发计划项目及陕西省重点产业链项目支持下,研究了橄榄油、山茶油、核桃油、漆树籽油等四种木本油料的营养品质特性,特别是不同植物油的油脂伴随物特点,开展了漆果油脂妇用保健的基础与应用研究,并开发了相关产品,为特种食用植物油的营养健康功能提供了一定的理论基础,并制定了相关团体标准。开展了安康十多种主要农作物硒富集能力、硒在农产品中分布及赋存形态研究,为富硒农业生产及富硒食品加工提供了一定的理论依据;对陕南富硒绿茶在内的一些天然产物活性成分抑制癌细胞增殖、降低肝细胞脂肪变性及降脂机理进行了研究。围绕秦巴山区水麻野生果食物新资源,从营养功能学及安全性等方面进行了较为系统的开发研究,研发了水麻果酒及水麻叶提取物产品,并在汉中略阳成功实现小范围人工栽培,有望将野生水麻果开发成为一种新果树资源。围绕豆制品行业的共性难题开展了节能减排及新产品开发研究,研发出豆渣蛋糕、豆渣油茶冲调粉、凝固型酸豆乳、魔芋腐竹等豆制品新型营养健康食品。对工业化豆制品企业产生的黄浆水,提出了资源化利用途径及生物转化技术,并开发了相关产品,对豆制品行业废物资源化利用及节能减排具有重要意义。在食品安全研究领域,针对果汁中广泛存在的耐热菌缺乏快速检测方法难题,进行了浓缩苹果汁(AJC)中耐热菌的PCR、QC-PCR、ID-ELISA、SPA-ELISA及DAS-ELISA快速检测方法研究,建立了相应的分子生物学及免疫分析化学快速检测方法,并创制了相应的快速检测试剂盒及速测卡,研究建立了液态食品中BPA类和PAEs类塑化剂的快速检测方法,多篇研究成果发表在国际学术期刊,并取得多项国家授权发明专利。研究建立了涵盖了我国苹果农药残留标准和有关国际标准中35种农药的多残留分析方法,与绿色苹果标准中的农药残留指标相匹配;研究揭示了苹果浓缩汁中展青霉素分布及加工链中的过程动态规律,并建立了C18SPE- HPLC检测方法,优于现行的国标测定方法(TLC);研究获得了一种新植物酶原,并以此酶为核心生物元件建立了可涵盖30余种农药残留的快速检测方法,灵敏度达到相应的国家和国际MRL限量标准要求。目前致力于陕南特种黑稻米的营养与健康功能研究及产品开发,以及天然富硒矿泉水、富硒茶、无抗富硒鸡蛋及富硒预制菜等富硒食品的基础及应用开发研究。
先后主持国家自然科学基金项目2项、科技部国家重点研发计划项目子课题1项、科技部“十五”食品安全重大专项子课题1项、国家民委重点科研项目1项、陕西省科技创新工程重大科技专项1项、陕西省重点产业链项目及关键核心技术攻关项目4项、陕西省百项科技成果转化项目1项、陕西省林业产业重点科研项目1项、陕西省工信厅揭榜挂帅项目1项、省级其它科技攻关项目6项、国家质检总局行业公益性科研项目1项、国家外国专家局高校特色项目1项、深圳市科技创新项目1项、企业横向合作项目10余项;先后有5项科技成果通过省级鉴定,其中1项达国际领先水平,3项为国际先进水平,1项为国内领先水平。获陕西省科学技术二等奖2项、三等奖2项,甘肃省科技进步三等奖1项,厅级科技成果二等奖2项,陕西高等学校科学技术一等奖2项,省中青年优秀科研成果奖1项,陕西省自然科学优秀学术论文三等奖1项。获得国家授权发明专利15项,获批软件著作权2项。主持制定食用特色木本植物油团体标准3项、检验方法标准2项。先后在国内外学术期刊发表论文280余篇,12篇入选ESI高被引全球排名前1%论文。出版教材专著7部,其中主编的《食品毒理学》为全国高等学校食品科学与工程类专业通用统编教材(2007年第一版、2023年第二版,中国标准出版社,北京),在全国60多所高校广泛使用,培养硕士研究生、博士研究生及博士后近百名。
